how can i have commands like TRIM, UPPERCASE used on a field so that it will display correctly, and export correctly? I'm not exactly sure how to make this happen. Ideally it would occur after a record was modified.

You can use the Auto Enter by Calculation, and gang the calculation like this

Trim (Upper( Text ))

Note that neither Trim() nor Upper() are formatting functions - they modify the text itself.
