Calculating number of entries in field

I have a field that is populated by a checkbox therefore allowing multiple entries into this field. I need to be able to count the number of entries some of which may be more than one word. eg:

A field that contained the data

number one

two

four

would return the value 3.

Can anyone point me in the right direction of how to do this.
