Here's a rookie question. If I use the FM Server do I still have to include a Set to Multi User [on] step in the files and their scripts?

Absolutely.

FM Server just serves the files to the guests.

Multi user allows all the guests to see and use all the files.

Well not quite.

Multi-user allows multiple users to access the file at the same time.

Multi-user (Hidden) allows multiple users to access the file at the same time, but the file will not be displayed in the Hosts list.

Single-user allows only one guest to use the file at a time.

Filemaker Server 5 allows you to server single-user files as well as multi-user files.

In answer to the original question - yes - you do need to set multi user on in all shared files.

There is some confusion here. FileMaker Server can host files that are set to Single User. I do not recommend this as a practice though. If the file is hosted, it is available to all who can connect, NOT just to one user at a time.
