I have a field in a portal column.. selecting from a valuelist of fields

Once i set its field from blank with text..

How can i disable any further editing of that field clicking on same field field again

Field is plain text, theres no calculation set on field..

To prevent further editing, you need to lock the record. To do so, a flag field can be set to 1. Then RLA rules will not allow a user to edit when the flag=1.

Search for Record Level Access threads. Also, you can create a "locked" layout, that the user is taken to when the record is marked as "locked". Along with the proper RLA, this layout will prevent further data edits (the fields do not have Enter in Browse mode available).
