I've created various relationships in the past but I can't seem to find out how to edit one once it has been created? Do I have to start again or can I add another element to the relationship?

I'm not quite sure what you mean but if you want to add another connection to an existing join (between the two tables) then double-click the joining box (the = or x etc) and it will open your relationship for edit. You can then add your left-side field, click your join option, point at your right-side field and then select ADD.
