Mmmm, just wondering if we have the same possibility to customize the Status bar for the end user as we do with the Menu?

You can manually customize the buttons on the status bar by right-clicking on it and selecting "Customize". That's the only way to adjust the look of it though (other than hiding it).

However; when you change the menu item for New Record, clicking the "New Record" button on the status bar will perform your modified action.

No. But you can hide it and provide your own buttons on the layout.
