Field order for export to text file

Defining an export to a text file (tab-separated, comma-separated, merge etc.) I can choose between Current layout ("xx") = default or select Current Table ("xx") in a drop-down. Why are the fields in layout mode in "random mixed" order? Viewing the layout of my current tables, it shows the fields in excatly the same order as they come in the table.

Where and how do I change the field order to ensure that the field order is excactly as I want for every export operation (I make this daily)?

Under the script step Export Records, you should be able to specify the order.
