I'm making this difficult i'm sure...

All I want to do is take this:

Name: Jonathan Smith

Address: PO BOX 1

City: Dallas

State: Texas

Zip: 12345

and paste it into a field.

Then I want fields: Name, Address, City, State, Zip to just in the value.

If you have a global text field called pasteString, you can add an auto-enter calculation (leave 'do not replace' checked) with (for name):

Trim ( GetValue ( Substitute ( GetValue ( pasteString ; 1 ) ; ":" ; ¶ ) ; 2 ) )

For address, change the first 1 to a 2 but leave the second 2 as is.

Keep in mind that this depends upon all the lines being there. If City might be missing (the entire line) then you will need to instead look for the 'label' name and parse right side of each label individually.
