RAID setup question

So I'm planning my next server "step-up" configuration and I want to do the recommended 1+0. I plan on using Mac Pro Servers but I'm not sure which way to go on the RAID setup.

So which one should I use? Can I use the pegasus as the system disk as well and not even use the internals?

Thunderbolt is pretty new so I wouldn't use it for a production server (yet) until it has proven what the reliability is.
