and what order would you choose?

Many things are neccisarily alphabetical.

If I have a value list of Days of the week, I want them to list, Monday, Tuesday etc,

not Friday, Monday, Thursday, Tuesday, Wednesday.

I agree! It would be nice to have all the same sort options on value lists as you do in the Sort Records dialog.

It would also be nice to be able to import Custom Value lists. We can export them using Design Funtions, but can't move them if we need to upgrade a solution.
