Is there anyway of adding to or customizing the fill and pen patterns that come with Filemaker?

Not that I know of. But you can always use images.

Not to the patterns themselves, but you can make, and then import patterns, etc. into a file, and then copy them into other files for use. Take a look at this link for more information about how this can be done.
