I can locate and edit the submenu name but how do I edit the items that are in the submenu?

 

For example, how could I remove the keyboard shortcut for "Find Again" which is in the Find/Replace submenu?

I dont think its possible.

Are you speaking of a custom menu? If so, you can edit a sub menu.
