Previously, my Filemaker allowed me to click "Learn" for a word that is highlighted as spelt wrong. Now "Learn" is greyed out.

How would that happen and how can I get it back?

Apparently you don't have a user dictionary selected - see:
https://help.claris.com/en/pro-help/content/checking-spelling.html
