Adding new fields in records - 2 part

Hi,

I was wondering if it is possible to add a new field into a record without it affecting all of the other records?

Also - when I added something it didn't format into the layout I had created. In other words - the font and text box for the new field is in the standard layout - black text. Is there a way to fix this or avoid this?
