in the database that will update as I update the data in the record?

The insert chart options don't seem to allow for this.

You could use a charting plugin.

or

You could query the database from Xcel and make the charts there

or

You could use the neat tricks that Brian Dunning has on his website (chartmaker pro)

I highly recommend the xmChart plugin from x2max software (x2max.com). The demo version works 100%, it just times out after an hour or two. It is very powerful, and fairly simple once you get the hang of it.

xmChart is worth the money. You can make custom charts as good or better than Excel from within the database. Takes a little work to put the data into the right format, though.
