I've got a client who is looking for a FM equivalent to the old 'In / Out / Will Return at X:XX am/pm" board that many companies use. Before I reinvent the wheel, are there any open source solutions available?

I don't know of a FileMaker solution, but there is InOutBoard which is a web based application.
