Ok, is there a way to make a backup of a database that is NOT a timestamped folder with the backup assistant? This makes it impossible to have a 3rd party backup app run since every time a backup is created it's created in a unique folder.

Just add a folder in your backup path then use your third party software to backup that folder.

All the timestamped folders will be inside that one.
