I have a list layout that is wider than the screen allows. When I scroll to the right, I lose the first field (which I need to see which record I am looking at).

Is there any way to freeze a column so that while scrolling right, the first column stays on the screen?

Nope. Increasing the resolution of your monitor might help if possible.

Otherwise you might need to get fancy with your layout, like moving the column that your need to see into the middle where it can be seen anywhere.

Another thing I was thinking of was to have a script zoom out when you go to that layout.

Have you tried Table view?
