How I can to configure FMP 6 for to accept the date in the italian format %d/%m/%Y via web companion ?

I have been using some Javascript to manipulate date formats.

You can also use calculations. While these are for use with For Pre Pro 6.0, which does not display dates the same as 6.0, they can be used in 6.0
